PEACH CHAMOMILE SORBET

26/07/2012

Sweet, juicy, orange fleshed and with a slight floral taste, peaches in season are super good.

The peaches here in Ontario started popping up around fruit stalls recently. The waft you get as you walk past is out of this world. I picked up a bag of peaches the other day and decided to make another frozen treat... Another easy frozen treat.

This is a sorbet with homegrown peaches and hint of chamomile. The chamomile adds a slightly herbal and flowery scent to the super sweet peaches. It's not a strong flavour but it works well leaving a lingering floral flavour.

Peach Chamomile Sorbet
one ice cream maker tub

2 peaches with skin
2 tbsp of honey
150 grams peach yogurt
1 bag of chamomile tea steeped in 1/3 cup water
pinch of salt

Cut up the peaches and boil water for the tea. Leave the skin on the peaches, it looks pretty!

Steep tea for 10 minutes.

Place all ingredients in a food processor and blend until liquid.

Pour into ice cream maker and churn until frozen.
